Summer Recipe Series: Carolina Caviar


Looking for that last minute side dish to take to a cookout, get-together, or just a fun snack for your next trip to the beach? Some call it “redneck caviar”, but I prefer “Carolina caviar”—call it what you like, it’s quick, easy, delicious and nutritious! It’s called “Carolina” caviar because all of the ingredients can be found locally grown right here in the Carolinas. 
Ingredients:
1-can black eyed peas
2-cans diced tomatoes
1-can sweet corn
1-cup zesty Italian dressing
  
For extra color and flavor:
Add equal portions of finely chopped red onion and green pepper
And if you really want to go all out, add some diced and cooked wild-caught South Carolina shrimp…yum!

Directions:
Mix all ingredients in a bowl, cover and refrigerate for at least an hour or, if possible, overnight. Serve with your favorite dipping chip!
